Pumpkin dessert

In Istanbul I can find cleaned, fresh pumpkin in every corner of the street.
We love pumpin soup. This time I decides to make something sweet, like pumpkin dessert. I found a lot of nice recepies. Finaly I choose one from Kwestia Smaku, but I wasn't sure about ginger in it, even it is turkish recepie, they say:) So I changed a bit.
Hope you will like it.



Ingredients:

- pumpkin
- honey
- brown sugar
- cloves
- lemon
- cream
- walnuts

Preparation:

Put pumpkin in a pan with not much water, cook about 10 minutes or until tender. Then add honey, lemon juice, sugar and cloves (2 of them).
After cooking take pumpkin out, add cream and walnuts to the sauce and mix.
The mix sauce put again on pumpkin.

So nice dessert!

Potato pancakes

I like very different kind of vegetable pancakes, for example:
this one with zucchini and carrots, known in Turkey as "müçver".
But what I like the most is our Polish potato pancakes, those with sugar and cream, or with only powder sugar. Çağatay is suprise, how can I eat vegetables with sugar?!
Yes, I can, realy can:)

and Melis can also...



What we need?

- potatoes
- eggs
- flour
- salt
- pepper
- cream (to make pancakes more fluffy)
- oil



How to prepare?

Wash potatoes and peel. Erase the friction on small holes.
Mix with flour, egg, cream, salt and pepper. Put small piece on hot frying pan with oil. Fry pancakes on both sides.

You can add chopped onions, mushrooms, and another spices and vegetables!

Ingredients:

- cauliflower
- red pepper
- carrots
- tomate
- celery
- leek
- dill.
- cream
- vegetable broth
- salt
- pepper

Description:

Wash, clean, rinse, chop into smaller pieces all of vegetables, put into boiling salted water. Boil until tender. Then add vegetable broth and cook a bit more. To warm soup put cream and dill.
In the end mix all in the blender.

Now when Melis eats the same food what we eat,

and she loves my soups.

- salt
- pepper
- milk.
- cream
- butter
- vegetable broth

Description:

In the end mix all in the blender.

Valentine's Day dinner



We decided on Mexican food, recepies by Tyler Ultimate (again)

We made fajitas and guacamole.

Ingredients for fajitas

Marinade (Mojo):
- orange, juiced
- limes, juiced
- olive oil
- garlic cloves, roughly chopped
- roughly chopped fresh cilantro leaves
- ground cumin
- salt

Meat:

- steak and chicken brest
- salt and pepper

Extra:

- red bell peppers, thinly sliced
- large onion, thinly sliced
- lime juice, olive oil, optional
- tortillas, warm
- guacamole, recipe down!
- good quality store bought salsa (we bought tomato and sour cream salsa)
- shredded cheese

Directions:

In a small 2 cup measuring cup, or something similar size and shape, combine all the marinade ingredients. Using an immersion blender, puree the marinade until smooth. Transfer to a re-sealable plastic bag and add the meat, seal and shake to coat. Refrigerate the beef for 2 to 4 hours to tenderize and flavor the beef.

Preheat a ridged grill pan on high heat.

Drain the marinade from the beef. Lightly oil the grill or grill pan. Season liberally with salt and freshly ground black pepper. Grill the steak over medium-high heat and cook for 4 minutes on each side and then transfer to a cutting board and let rest. Depending on the size of your grill pan you may need to cook in batches.

Once the beef is off the grill pan and resting, add the bell peppers and onions tossed with lime juice and olive oil, if using. Grill the mixture for 7 to 8 minutes until the vegetables are just barely limp.

While the peppers and onions are cooking, heat up the tortillas. Turn any free burners on a medium low flame. Place a tortilla on each flame and let it char about 30 seconds to 1 minute, flip the tortilla and repeat on the second side. Once heated and charred remove the tortilla to a clean tea towel and wrap to keep warm. Repeat until you have warmed all of your tortillas.

Thinly slice the steak against the grain on a diagonal.

Now time for guacamole:

- avocados
- limes, juiced
- small onion, chopped
- garlic clove, minced
- fresh cilantro leaves, roughly chopped
- red pepper
- kosher salt and freshly ground black pepper
- drizzle olive oil

Halve and pit the avocados. With a tablespoon, scoop out the flesh into a mixing bowl. Mash the avocados with a fork, leaving them still a bit chunky. Add all of the rest of the ingredients, and fold everything together.

Fish soup for whole family

I found fish head in our freezer:)
so what I could do with it? Soup!
Another fish soup recepie in our blog.
This time very easy one for whole family. Melis ate with relish!



Ingredients:

- fish head
- carrot
- parsley
- potato
- peas
- onion
- garlic
- celery
- allspice
- bay leaf
- vegetable broth
- salt, pepper
- dill
- cream

Preparation:

To the pot of water put fish head, add bay leaf, allspice, onion (half) and one clove of garlic. Boil. Take head and dirt from fish out. Then add all chopped vegetables and vegetable broth, also salt and perrer.
Cook on low heat. In the end add a dill and some cream.

Easy and very tasty!

English Cookies

My new and I think last baking experience:)
Melis loved it:)



Ingredients:

P.S My cookies I did with half of each component.

-1 glass of sugar
-1 cube butter
-4 teaspoons plain yogurt
-1 teaspoon baking powder
-1 vanilla sugar
-2 glass of flour
-handful of raisins



Method of preparation:

Soft butter, sugar, yogurt, vanilla sugar and baking powder mix in a bowl of plump mass mixer. Add raisins. All ingredients mix again.

With tears small pieces of dough and lep their balls with a diameter of 4 cm. Flatten balls between your palms so that the slices were created with a diameter of no more than 5 cm.

Bake at 180 deg C about 12 minutes, the golden color.

You can add to cookies everything you want: walnuts, dry fruits, chocolate, cinnamon etc.

Muffins for Melis

I don't like to bake and I don't know how, but for Melis I try:)



Here's the basic recipe for Melis' muffins

- 250 g flour
- 2 teaspoons baking powder
- 2 eggs
- 250 g of yogurt or butter,milk
- 100 g sugar
- 75 ml oil

I added chocolate and raisins to my muffins.

To the bowl put flour, baking powder and sugar.
In the second bowl mix eggs, yogurt and oil.
Then mix two bowls together, quickly stir, pour into a recess form and insert into oven. Warm oven at 180°C. Bake 20-25 minutes.
After baking, leave at least 5-10 minutes in the form that they can cool.
