Croquettes with cabbage and mushrooms

I know it can be strange to it croquettes in the middle of july:) because it's Christmas Food.
I made it with help of my polish friend Agnieszka.We made good job:)
It was great lunch:)


Ingredients for the dough:

- milk
- eggs
- flour
- salt
- water
- oil

Ingredients for filling:

- sauerkraut
- mushroom
- onion
- bay leaf
- pepper, salt,
- allspice
- vegeta or vegetable broth

Preperation:

Pancakes:

Ingredients for the cake mix. At pan pour a few drops of oil, distribute the dough and fry on both sides.

Stuffing:

Rinse the sauerkraut well, add a bit water and cook till soft, add spices: bay leaves, allspice, grains of pepper. Then drain, squeeze and cut into small pieces. Chop the onion and fry. Add clean and choped mushroom. Cook a bit. Add cooked cabbage. Cook about 30 minutes, add salt, pepper and vegeta. Spread stuffing the pancakes and roll up like croquettes.
In the end you can put then in to the egg and breadcrumbs and fry only.

Easy pasta

I love pasta, Melis loves pasta, and I think Cato likes pasta:)
This is very easy, fast and tasty pasta recepie.


Ingredients:

- penne pasta
- carrot
- zucchini
- onions
- garlic
- vegetable broth or vegetable seasoning
- parmesan
- salt, pepper
- olive oil
- water

Preperation:

Wash vegetables, peel and cut into cubes. To the pot put a bit olive oil, add onion and carrot, cook for a moment, and then add zucchini, again cook a bit. To the vegetables add hot water, broth and pasta, salt and pepper of course. Cook unil pasta will be alDente. In the end pour the water through the filter, so pasta will stay with vegetables and parmesan...and EAT!:)

Lentil soup

Mother in law visited us, so I've the chance to cook something Turkish:)
I choosed lentil soup ("Mercimek çorbası")



Ingredients:

- red lentils
- onions
- butter
- tomato paste
- chicken broth
- sweet paprika
- dried mint
- salt, pepper

Preperation:

Fry onion on oil first. Wash the lentils, then add ro onion with tomate paste and chicken broth.
Then add boiling water.
Cook for a 10-15 min. After 10 minutes, mix all products in the pot (this process to separate the smaller pieces of lentils)
In the end add mint, add salt and pepper.
For a service you can give also lemon and red spice pepper.


Delicious!

Warning: You can expect gas after that soup:)))

Polish pancakes with white cheese

Sometime ago I put recepie about another pancakes, and I promise you that one day I will make real polish pancakes with white cheese.
It is here:)


Ingredients: 


Pankcakes:

- egg 

- milk  
-flour
-
sugar
- oil


Filling:
- white cheese
- egg yolks
- vanilla sugar
- raisins

Extras:
- cream
- powder sugar


Preparation:
In a bowl we put 1 egg with  1 cup of milk, add 1,5 cup of flour and  a bit sugar. Mix everything to a smooth paste. Warmed up the oil in a frying pan and put a bit of paste. Fry pancakes on both sides until they are golden.  

To separate bowl put white cheese, egg yolks, a bit vanilla sugar and raisins ( put them for 5 min. to hot water to make them softer) Mix all. Put filling on pancakes and roll them. In the end put cream and powder sugar on pancakes.

Lamb with vegetables, "Kopytka" (Potato Dumplings) and salad

Very nice lunch or dinner recipe.
It was my first time to cook lamb meat, I don't like lamb much, but my husband is Turkish, so...
I tried to cook something with it :)
I made lamb for Cato and kopytka for myself, but he ate also:)


Lamb with vegetables:
- lamb meat
- onion
- garlic
- carrot
- green peas
- tomato (or tomato paste)
- vegetable seasoning (Vegeta)
- salt, black pepper
- olive oil
- water

Warm up olive oil in the pan, add chopped onions and garlic, then put meat, cook a bit around 5-10 min, stirring occasionally. After this time add hot water, green peas and cuted to small pieces carrot and tomato, can add a spoon of tomato paste. Add vegeta, salt and pepper. Cook for an hour on low heat.

Kopytka (Potato Dumplings / Polish Gnocchi)
- potatoes
- eggs
- flour
- salt

Boil the peeled potatoes in salted water until they are soft. (I used the potatoes that was cooked one day before). Then let them cool down. Mash them until there is no lumps. Add about 2 cup of flour, 1-2 eggs, and salt. Mix (the best by hand) until the ingredients are combined. Add more flour, as needed, until the mixture becomes a soft dough consistency. Put flour on a flat working surface, then the dough on it, and knead it until gets smooth and pliable. Cut a small pieces of the dough and roll in hands to middle strips. Then from them cut to small rectangles. Boil salted water in a large pot. Put the drough pieces to the water, don't cover the pot. Cook until they float to the surface. Take them out with slotted spoon.

I eat "kopytka" with sugar and cream:) Yummy!
You can also make with diffrent sauces.

Salad
- salad
- tomato
- cucumber
- chives
- parsley
- dill
- olive oil

- salt and black pepper


Mix all ingredients!:)
