Polish Chicken Soup (Rosół)

Polish people love Rosół (Ro-suh). Most of families eat that soup on sunday, because it's family day in our culture, so it is supposed to be celebrated with nice food :) and rosół is that holiday soup.



Ingredients:

- 300g of a chicken part. (I made from breast, so it isn't so fatty, but my mom makes from wings and legs. It depends on your choice)
- 1 or 2 carrots
- 1 onion or 1/2 leek
- 1/2 celery
- 3 peppercorns
- 1 tablespoon salt
- 1 bay leaf
- Parsley
- Salt
- Cold water

Method:

1) Place cut-up chicken in a pot, cover with cold water, add salt
2) Cook under cover over a low heat for 1 hour
3) Wrap a piece of thread around the leek and tie it so it won't dissolve in the soup.
4) Clean and cut all the vegetables into big chunks
5) Add the vegetables, peppercorns, bay leaf and cook for 30-45 minutes more
(or until vegetables and meat become tender)
6) For rosół, you can also prepare some noodles or kluski (it is made from 1 egg, flour, salt and water. Mix all in a bowl until it has the texture of cream and put with a desert spoon into boiling soup)

Rosół is the base for many vegetable soup. I made tomato soup by adding 2 table spoons of tomato paste into it and you have tomato soup :) You can use rosół as a soup stock and freeze after filtering into plastic cups.

My grandma Zosia makes the best rosół in the whole world :) I love it and I miss her cooking all the time.
