Artichoke in Olive Oil

We continue to cook healthy, and since it is the season for this marvelous vegetable, it is high time to consume a lot of it.
Artichoke is usually very expensive, however nowadays is the season and in Istanbul you can find fresh ones lying on every greengrocer, at a more reasonable price.



This vegetable is like a sponge: It sucks up every bit of taste in the water it is cooked, so don't limit yourselves to the recipe here, you can add many more tastes to it how you like.

Ingredients:

- 4 slices of artichoke
- 1 glass (250ml) of olive oil
- 1 medium size potato
- 1 medium size carrot
- 1 large onion
- 200g of peas
- dills
- 2 lemons
- 2 teaspoons salt
- water

Method:

- Dice the potato, onion and carrot
- Place the artichokes on the bottom of a deep pan
- Get the zest from one lemon and juice both lemons
- Pour the lemon juice over the artichokes
- Put the other vegetables (except dills) on top of the artichokes
- Add salt
- Cover them with cold water, cover the pan and cook until it boils
- Once it boils, lower the heat and cook for 30 minutes more (you need to check if potatoes and peas cook, others will cook faster)
- Once it is cooked, take off the heat, wait until it cools down
- Take the artichokes on a plate, put enough vegetables on top and let them cool more.
- Refrigerate overnight. You can shrink-wrap and add a slice of lemon.
- When serving, pour a little bit of olive oil, a sour syrup (or lemon juice), decorate with dills.
